The Kefalotyri of Naxos Island otherwise called “Arseniko” which, in Greek, means “male”. It is one of the symbols of Greek cheese-making tradition. “Arseniko” is produced in the highlands of the island at an altitude of 700m and above, from sheep and goat milk.
