Graviera of Naxos (PDO)
Graviera of Naxos is a hard, mild, pale yellow cheese, with a full, rich taste. It has a strong aroma of butter and milk and a lighter aroma of walnut and almond. It has been characterized as a PDO product (Protected Designation of Origin) and is produced from cow’s milk or a mixture of cow’s milk with sheep and goat milk, in a ratio of 80% to 20%.
