San Michali of Syros P.D.O.
San Michali cheese is produced exclusively in the island of Syros. It contains only cow’s milk collected from local breeds of the island as this provides the production process as a Protected Designation of Origin.
San Michali has a spicy flavor and golden skin. Its mass is solid, with irregular holes and cutting crumbles like parmesan. The annual quantity production on the island is quite limited since each kilo of cheese takes 10 pounds of milk.
It is this rich milk content that gives San Michali’s rich hazelnut and other nuts aromas from the specific flora of the island and the imaginary trip to Syros is inevitable in every bite.
