Varietal composition: Athiri, Aidani, Assyrtiko.
Vinification: Spontaneous fermentation with indigenous yeasts, remaining on the fine wine lees.
Aging: 6 years.
Aromas of lemon & lime in a mineral character. On the palate the wine is dry, with refreshing acidity and a salty aftertaste.
Food pairing: Seafood, shellfish, grilled or fried fish, spaghetti with lobster.
